This is absolutely delicious. Don’t change a thing! I took this to a dinner party and everyone loved it but I’ve been making it at home just for us too.

Prepare Frosting: While the cake is cooling, prepare the pineapple frosting. In a mixing bowl, beat the 1/2 cup softened unsalted butter with an electric mixer until creamy. Gradually add the 4 cups powdered sugar, beating until smooth. Add the 1/4 cup drained crushed pineapple and 1 teaspoon vanilla extract. Mix until well combined and the frosting is creamy and spreadable.
Frost & Garnish: Once the cake has cooled completely, frost the top and sides generously with the pineapple frosting. For an optional garnish and extra tropical flavor, sprinkle 1/4 cup shredded coconut on top of the cake.
